Yummy in my tummy. This is such an easy recipe but sooooo good. Its from my mum so has childhood memories too. Its an interesting take on cake and uses vinegar ..yes, vinegar! Every time I bake this it vanishes pretty fast.
I use 1.5 cups of flour, 0.5 cup of cocoa, 185 gms butter, 1 tsp of baking soda (not powder), 1 cup of milk which has been left for 10 min after adding a teaspoon of vinegar in it, 2 eggs, 1.5 cups of ground sugar, vanilla essence (I added some champagne essence this time). Just mix all the dry ingredients and add eggs and butter. Blitz in a food processor. Pour in the milk and mix again. Bake at 180C for 30-40 minutes and then watch it vanish.
Burnt Pineapple-StarAnise Tart
This delicious and oh so simple pineapple star-anise compote topped on a flaky tart (also home made) and baked till the topping is slightly burnt and caramelized. Enjoy with fresh cream
We get the most awesome strawberries this time of the year in Mumbai, India so I decided to go a bit crazy and made these 2 fantastic deserts.
Both were devoured and polished off within minutes of being served!

Choco-coffee pudding is a simple chocolate cake immersed in custard which is flavored with coffee
For the cake, I added a few drops of champagne flavor (Lorann Oils) and worked up the flavors like magic! try it

Baked Caramel Custard
Easiest desert to whip up
- 3 eggs
- 2 cups milk
- Vanilla essence
- 3-4 tbsp sugar
Whisk everything and keep aside. Caramelize some sugar in a pan. Pour the mix into the pan. Bake at 200 degrees (c) for 30 min. Cover with foil if it looks like its burning atop. Cool before removing from dish and chill to serve!
Fresh Strawberries and Cream
Get some double cream, add sugar and whisk it gently – make sure you do not overdo it – the cream will split if you do. Wash and slice the strawberries. Assemble and serve- its probably the quickest dessert you can whip up in literally 5 minutes.
Substitute the cream for Ice cream, custard, and you can add more fresh fruits – bananas, grapes, apples are great picks.
