Absolutely delicious summer salad. Very quick and simple.
I served my salad in the watermelon shell itself. Once you scoop out the watermelon just zigzag your knife along the edge to get this beautiful serving bowl. I used a mix of watermelon and musk melon, scooped them out using my cool scooper which gives me this little shape – and chilled all these prior to serving.
Just get the bowl, add in melon, few fresh mint leaves, pine nuts (pre-roasted), olives, feta cheese cubes and a squeeze of lime juice. You can drizzle some olive oil if you like as well. And serve.
This doesn’t stay so eat fresh!
