Simple Summer Salad

Salads are probably the easiest things to toss up for a quick lunch. You can do a little prep and get a couple handy ingredients organized. For this salad I used black beans (Rajma) boiled and stored in the fridge. Other ingredients here are roasted Zucchini : lightly tossed in a pan – use olive oil and season with garlic, chopped tomatoes, you can add onions. I also added some iceberg lettuce leaves and salt & pepper. Chilled it for 30 minutes and add some salad dressing just before you serve, I used some garlic mayonnaise.
